Barbacoa Tacos Dorados
Dorados means golden, and that's the whole technique — fill the tortilla, fold it, and pan-fry until it crackles. Barbacoa and Oaxaca cheese inside; green and red salsa over the top, with onion and cilantro to finish. Best eaten straight from the pan.

What is barbacoa?
Barbacoa is beef cooked low and slow until it pulls apart with a fork — traditionally wrapped and steamed in a pit oven, which is where the word "barbecue" comes from. It's seasoned rather than sauced, so the beef itself is what you taste.
