Barbacoa Beef Enchiladas

Ingredients

1 package Del Real Foods Barbacoa, prepared according to package instructions
2 cups red enchilada sauce
8 corn tortillas
1½ cups shredded Mexican-style cheese, divided
¼ cup Mexican crema, for serving
¼ cup diced white onion, for serving
2 Tbsp chopped cilantro, for serving

Instructions

1.

Preheat the oven to 375°F. Prepare the Del Real Foods Barbacoa according to package instructions.

Spread ½ cup enchilada sauce evenly over the bottom of a 9 x 13-inch baking dish.

Warm the tortillas until soft and pliable. Divide the Del Real Foods Barbacoa and ½ cup cheese among the tortillas. Roll tightly and arrange seam-side down in the baking dish.

Pour the remaining enchilada sauce evenly over the enchiladas and top with the remaining 1 cup cheese. Bake for 15–20 minutes, or until the sauce is bubbling and the cheese is melted.

Drizzle with Mexican crema and top with diced white onion and cilantro. Serve warm and enjoy.
