Green Chile Chicken Stew

This is a stew built for a weeknight: shredded chicken, refried beans and fire-roasted green salsa simmered with broth until it thickens. The beans do the thickening, so there's no roux to make. Serve it over rice, with tortilla chips for scooping.

Ingredients

  • 1 package Del Real Foods Shredded Chicken, prepared according to package instructions.
  • 1 package Del Real Foods Refried Beans, prepared according to package instructions.
  • 1 package Del Real Foods Fire Roasted Green Salsa.
  • 2 cups chicken broth.
  • 1 package Del Real Foods Mexican Rice, prepared according to package instructions.
  • 2 cups tortilla chips.
  • 2 tablespoons chopped cilantro.
  • 2 limes, cut into wedges.

Instructions

In a large saucepan, combine the Del Real Foods Shredded Chicken, Refried Beans, Fire Roasted Green Salsa, and chicken broth. Bring to a simmer and cook for 10–15 minutes, stirring occasionally, until thickened and heated through.

Divide the Del Real Foods Mexican Rice among serving bowls.

Ladle the green chile chicken stew over the rice.
4.
Garnish with chopped cilantro and serve with lime wedges.
5.
Serve immediately with tortilla chips alongside for dipping and scooping.

What makes it green?

The green comes from tomatillos and green chiles — the base of salsa verde. Tomatillos look like small green tomatoes in papery husks, but taste brighter and more acidic. Fire-roasting them before blending is what gives the sauce its depth.
