Layered Barbacoa Dip

Layered dip is assembly, not cooking. Refried beans on the bottom, then sour cream, guacamole, barbacoa, salsa and cheese — built in a glass dish so the layers show. Fifteen minutes to put together, and it holds in the fridge until people arrive.

Why layer it?

Layering means every scoop picks up everything at once — beans, meat, cream, heat. Building it in clear glass isn't only for looks: it lets people see what they're getting into before the first chip goes in.
